Vegetarian Dish: Shanghai New Year Cake (Salty) 素食:上海年糕(鹹)

Chinese New Year Festive Food - Vegetarian Shanghai New Year Cake (Salty)
Ingredients (For Year Cake) (pic 1)
Rice Flour
Glutinous Rice Flour
(Flours ratio 1:1)
Warm Water
Other Ingredients
Vegetarian ingredients of individual’s choices
In this dish:
Mushrooms, carrots, cabbage, pickled tuber mustard
Sauce
Vegetarian oyster sauce or sauce made from
Light soy sauce, dark soy sauce, sugar, salt, white pepper, corn flour
Steps (for Year Cake)
1.      Mix the Rice Flour & Glutinous Rice Flour
2.      Add warm water & knead the flours into a dough (pic 2)
3.      Knead the dough into cylindrical strips with diameters approx 3/4 cm (pic 3)
4.      Put the strips onto a plate greased with a layer of vegetable oil
5.      Steam the strips for 20 mins after water boils & cool them down completely for easier slicing(pic 4)
6.      Slice the strips & put them onto a plate pre-greased with vegetable oil. (pic 5)
7.      Separately place the rice cake slice-by-slice asap to avoid stickiness.
Steps (Stir Frying)
1.      Put some vegetable oil in a wok over medium low heat
2.       Stir fry the vegetables & mushrooms in a wok over medium heat, adjust the heat & add in some water when necessary. Stir fry for a while
3.      Put in the new year cake pieces & stir fry. Add in some water when necessary
4.      Mix well the sauce and add in, or add in the vegetarian oyster sauce. Stir fry again for a while
5.        Ready to serve (pic 6)

材料(年糕)(1)
粘米粉
糯米粉
(兩者比例1:1)
溫水
其他材料
素菜 (隨個人喜好)
是次選用:
冬菇、甘筍、椰菜及榨菜
醬汁
素蠔油或由這些材料合成的醬汁
醬油,老抽,糖,鹽,白胡椒粉,粟粉
步驟(年糕)
1.  把粘米粉和糯米粉混合
2.  加入溫水把米粉搓揉成麵團 (2)
3.  再把麵團搓揉成圓柱條狀,直徑約3/4厘米 (3)
4.  塗抹一層植物於盤子上
5.  把麵團條蒸20分鐘(水沸騰後計)。拿出待麵團條完全冷卻,這樣就比較容易切片 (4)
6.  把年糕片放到一個預先塗抹植物油的盤子(盡快把年糕片逐片分開放置免黏) (5)
步驟 (炒年糕)
1. 用中小火起鑊
2. 炒炒素菜,看情況調整爐火及添加一些清水
3  放進年糕片繼續炒。必要時添加一些清水,再炒一陣子
4  加入已拌勻的醬汁或素食蠔油再炒炒
5. 完成(圖6)
