Vegetarian Dish: Coconut New Year Cake 素食:椰汁年糕

Chinese New Year Festive Food - Vegetarian Coconut New Year Cake
Ingredients (pic 1)
Glutinous Rice Flour 230g
Wheat Flour 80g
Corn Flour 2 Tablespoons
Brown Sugar 200 g
Light Coconut Milk 1 small can (270 ml)
Hot water 100 ml

Decorative Ingredient
Red Date
Steps
1.      Dissolve the brown sugar in hot water (pic 2)
2.      Add coconut milk into the syrup from step 1 (pic 3)
3.      Mix the glutinous rice flour with the wheat flour & corn
     flour (pic 4)
4.      Slowly add the sweetened coconut milk into the flour
     mixture from step 3 & keep on stirring to avoid granules
     formation. 
5.      Pour the mixture from 4 into baking tray or aluminum foil  
     tray pre-greased with vegetable oil (pic 5)
6.       After steaming for 1 hour the cake is ready to serve (pic 6)
     (duration varies with different sizes and materials of trays
     used. Adjust the time according to practical situation) (place
     the red date onto the top of the cake at a time nearing
     completion)


農曆新年素食 - 椰汁年糕
材料 (1)
糯米粉230
黃糖200
澄麵80
粟粉2湯匙
減脂椰奶1(270毫升)
熱水 100毫升
裝飾材料
紅棗
步驟
1      用熱水溶解黃糖(2)
2      把椰汁加入步驟1的糖水(3)
3      把糯米粉,澄麵和粟粉混合(4)
4      把含糖椰奶緩緩加入步驟3的麵粉混合物並不斷攪拌,以免形成顆粒。
5      把混合物注入一個已塗抹植物油(防黏底)的焗盤或鋁箔盤(5)
6      用高火蒸約1小時即成(6) (實際時間因應所用盤子的大小及其材而異,可視情況調整)(接近完成時擺放紅棗於年糕上,紅棗的小部分輕輕推進年糕)
